Prime Rib Cooking Time
Bake in a fully pre-heated oven at 500 degrees Fahrenheit for 15 minutes for a 7 lb roast. Reduce heat to 325 degrees Fahrenheit and continue baking :
- 10-12 min per pound for rare
- 13-14 min per pound for medium-rare
- 14-15 min per pound for medium
- 16-17 min per pound for medium-well
Roast until the thermometer registers:
- 115-120 degrees for rare
- 125-130 degrees for medium rare
- 135-140 degrees for medium
- 145-150 for medium-well
What size do I need?
The general rule of thumb is 1 pound per person. Please keep in mind that the bones do play into the weight and a prime rib roast will reduce in size about 20% after cooking. For example if you are cooking a 20 pound rib roast it will weigh in at 16 pounds after cooking.
