What’s for dinner? The reoccurring question of the day. During this Pandemic I have been doing a lot more cooking but I have always believed in keeping it simple. Starting with high quality ingredients are all you need to create a quick and delicious dinner. I recently fell back in love with the French Pork Chop. I can’t believe how juicy it is. I seasoned it heavily with my Pork Rub seasoning and my go to Maldon salt and threw it in my cast iron skillet on medium high for 7 minutes on each side. The result was incredible, juicy, tender and so flavorful. For the side item I chopped whatever veggies I had in my fridge, zucchini, broccoli, tomatoes, red and yellow bell peppers sautéed in an amazing olive oil from my friends trees in Greece. I have found that a great olive oil really makes a big difference, so invest in one. I literally made this in 20 minutes and dinner is served. Life is so busy so keeping it simple is my preferred way of cooking. I’m lucky my kids are not potato fans, unless its a French fry, so we normally make the proteins the center of our meal, throw together a quick salad and usually charred broccoli and voila dinner!
