Place the Rib Racks bone side down on the grill, close the lid and adjust the temperature until it holds at 300 degrees Fahrenheit. Cook the ribs for 30 minutes. DO NOT OPEN THE LID
After 30 minutes its time to wrap them tightly in foil. Before tightly sealing the foil add a generous amount of apple juice to the packet. You need to make sure the packet is tightly sealed so no juice will leak out.
After sealing your foil packets tightly, place the racks back onto the indirect cooking area, close the lid and increase the temperature to 375 degrees Fahrenheit . This allows the ribs to steam for optimal tenderness
After 30 minutes of steaming in the foil turn the heat down to 250 degrees Fahrenheit, unwrap them and place them back onto the indirect cooking surface to finish them.
After placing them back onto the grill coat one side with BBQ sauce, close the lid and cook for 5 minutes. After 5 minutes open the lid and flip the rack to apply sauce on the other side, close the lid and cook for 5 minutes.
Repeat this process for another 30 minutes, 5 minutes after the last coat, remove the racks, cut and serve!
